Apricots and hot peppers is an amazing combination. Add prawns and avocado and you get a fantastic dish with everything in it to keep you going.

  • 1 pack baby leaves salad;
  • 6 apricots;
  • 1 avocado;
  • 170g king prawns;
  • 6 hot peppers;
  • olive oil and balsamic vinegar;

method

Step by step

  • Arrange the salad leaves on your plates.
  • Cut the avocado lengthwise around the seed, open the two halves, remove the pit and scoop out the flesh with a spoon.
  • Cut the apricots into thin slices.
  • Add the prawns.
  • Cut the hot peppers and add them to the salad.
  • Season with olive oil and balsamic vinegar.
