Apricots and hot peppers is an amazing combination. Add prawns and avocado and you get a fantastic dish with everything in it to keep you going.
- 1 pack baby leaves salad;
- 6 apricots;
- 1 avocado;
- 170g king prawns;
- 6 hot peppers;
- olive oil and balsamic vinegar;
Step by step
- Arrange the salad leaves on your plates.
- Cut the avocado lengthwise around the seed, open the two halves, remove the pit and scoop out the flesh with a spoon.
- Cut the apricots into thin slices.
- Add the prawns.
- Cut the hot peppers and add them to the salad.
- Season with olive oil and balsamic vinegar.
