This frittata is not just green, it is super green! I don’t use salt in my recipes but I love some extra cheese as an alternative.
You need
- Large non-stick pan
- 4 eggs;
- 100g spinach leaves washed and gently squeezed;
- 2 tbsp self-raising (gluten free) flour heaped;
- 20g cheddar or Gruyère cheese grated;
- Place the spinach, eggs, flour in a food processor or Thermomix and blitz until smooth (20 sec, speed 4 for TM). You might need to stop halfway and scrape down the mixture with a spatula.
- Add the cheese and stir the mixture gently (10 sec, RS 1 for TM).
- Put a frying pan with a knob of butter or coconut oil on a medium-high heat.
- Pour in the green mixture and tilt the pan to distribute it evenly.
- Cook for a couple of minutes until the frittata is set, then flip and cook for another two minutes.
- Serve warm with flat bread or crackers.
