Spinach frittata by @recipesformax

This frittata is not just green, it is super green! I don’t use salt in my recipes but I love some extra cheese as an alternative.

You need

  • Large non-stick pan

ingr Ingredients

  • 4 eggs;
  • 100g spinach leaves washed and gently squeezed;
  • 2 tbsp self-raising (gluten free) flour heaped;
  • 20g cheddar or Gruyère cheese grated;

methodStep by step

  • Place the spinach, eggs, flour in a food processor or Thermomix and blitz until smooth (20 sec, speed 4 for TM). You might need to stop halfway and scrape down the mixture with a spatula.
  • Add the cheese and stir the mixture gently (10 sec, RS 1 for TM).
  • Put a frying pan with a knob of butter or coconut oil on a medium-high heat.
  • Pour in the green mixture and tilt the pan to distribute it evenly.
  • Cook for a couple of minutes until the frittata is set, then flip and cook for another two minutes.
  • Serve warm with flat bread or crackers.
