
Fish soup by @recipesformax
It might not look very attractive but it is delicious, easy to prepare, contains a lot of Omega-3, and costs under 50p. You can use fresh fish (mackerel will go well) or add other vegetables (green bell peppers or green peas, for example). Use your imagination and whatever you have at hand to create your unique combination. It works every time.
- 400g can of pilchards in tomato sauce;
- 2 large carrots;
- 3 celery sticks;
- 1 large or 2-3 medium potatoes;
- 1 large white onion;
- 1 fish stock pot;
- Fresh parsley;
Step by step
- Grate the carrots, chop the onion and celery.
- Peel the potatoes and cut them into small cubes.
- Heat a bit of cooking oil in a large soup pot and saute the carrots, onion, and celery for 3-4 minutes.
- Add 2L of boiling water and the stock pot. Stir well.
- Add the potatoes and cook them until they are half-ready.
- Add the fish to the pot.
- Cook for 3-4 min, add more water if needed.
- Season to taste. Add the parsley finely chopped.
- Serve with toasted bread.
