
Pulled pork by @recipesformax
I call this dish Mexican pulled pork just because people like references but it is not. This is Pulled Pork My Way :). I have tried different parts of pork and find fillets the most suitable. You can also use joints but trim off any large pieces of fat if you care about your health. One downside is that you need a pressure cooker otherwise it’ll take you more than 6 hours to get the right tender texture of the pork and you need to be very careful not to over dry it while cooking for so long. My pressure cooker is one of the best investments in my kitchen.
You need
- Pressure cooker
- 850g pork fillet;
- 3 large onions;
- 1 can double concentrated tomato puree (140g);
- 300ml water;
- Any spices you fancy. I usually add garlic, oregano, cumin, turmeric, and some chili;
- Cut fillets into large chunks.
- Quarter onions.
- Put the pork and onions in the pressure cooker, add the tomato puree and water.
- Season well and stir everything together.
- Lock the lid on and bring up to high pressure. Once high pressure is reached, reduce the heat to as low as possible while still maintaining high pressure. Cook for 1-1.5 hours. Turn off the heat and let the cooker release pressure naturally.
- Once pressure is released, remove the lid and pull the pork apart using a fork.
- Serve piping hot. My favourite combination is pulled pork with freshly baked flat bread. You can make burgers with pulled pork or just serve with rice or boiled/baked potatoes and green salad.
