
Stir-fry by @recipesformax
Stir-fries are great. Cooking is fast and easy, and the result is always delicious. Every time you can create a new dish just by using different vegetables you have in your fridge or even freezer. I find stir-fries very handy and affordable.
You need
- 14″ Non-Stick Wok (optional) or Large Non-Stick Pan
- 2 nests of Noodles;
- 1 chicken breast thinly sliced;
- Mixed vegetables thinly sliced. My favourite combination is red bell pepper, green beans, red onion, and beansprouts. But you can create your own combination using even frozen peas and sweet corn (pictures). I’d also add fresh coriander finely chopped to all stir-fries;
- The vegetable combination pictured: 1 red bell pepper, 1/2 red onion, 1/2 small cup frozen green peas, 1/2 small cup sweet corn;
- 1 tbsp Soy sauce;
- 1 tbsp Oyster sauce;
- 1 tsp Fish sauce;
- Cook the noodles according to pack instructions.
- Meanwhile, heat the oil in a wok or a pan.
- Stir-fry the chicken for 2 to 3 minutes, or until almost cooked;
- Add the vegetables and stir-fry for a couple of minutes.
- Drain the noodles and add to the pan, stir-fry for 2 minutes.
- Add the soy and fish sauces, stir well and cook for a couple of minutes more. Serve immediately.
