Pasta with mozzarella and tomatoes

This pasta has been my saviour for so many years! Simple ingredients, no need to cook a sauce, and it makes a light tasty lunch or dinner.

ingr Ingredients

  • 10 cherry tomatoes (or 1 large vine tomato);
  • 10 mini mozzarella balls (or 1/2 125g mozzarella cut into cubes);
  • 3-4 basil leaves;
  • 100g dried pasta;
  • Freshly grounded black pepper;
  • 1 tbsp extra virgin olive oil;

method

Step by step

  • Add salt to boiling water.
  • Add the pasta. Stir it occasionally.
  • Follow the package directions for cooking times (for “al dente” pasta always reduce the time by 1-2 minutes).
  • Drain pasta, add mozzarella, tomatoes and basil leaves.
  • Lightly season with olive oil and black pepper.
