You need

  • Ring cake tin
  • Electric mixer or Thermomix

ingr Ingredients

  • 150g butter
  • 100g caster sugar
  • 50g white marzipan
  • 4 eggs
  • 150g gluten free self-raising flour
  • 1 teaspoon gluten free baking powder
  • 100g desiccated coconut
  • 100g corn flour
  • 100ml kefir
  • 6 plums pitted and cut into quarters
  • Almond flakes
  • Icing sugar for dusting

methodStep by step

  • Preheat the oven to 185C
  • Melt the butter
  • Add the sugar, marzipan and whisk until light and creamy (use the electric mixer)
  • Add the eggs one at a time, keep whisking
  • Sift in the flour and whisk again
  • Add the kefir, coconut, corn flour and mix well
  • Spoon some of the batter into the base of the cake tin
  • Arrange the plums to form one consistent layer
  • Cover the plums with the rest of the batter and spread evenly
  • Sprinkle with the almond flakes
  • Bake in the preheated oven for 45 min, until the cake is firm to the touch and a wooden stick inserted into the middle of the cake comes out clean
  • Remove from the oven and let it cool for 10 minutes
  • Remove from the tin and dust with the icing sugar

  • Melt the butter (2 min – Speed 2 – 60C)
  • Add the sugar, marzipan and whisk until light and creamy (2 min – Speed 5)
  • Add the eggs one at a time, keep whisking (2 min – Speed 5)
  • Sift in the flour and whisk again (1 min – Dough)
  • Add the kefir, coconut, corn flour and mix well (2 min – Dough)
  • Spoon some of the batter into the base of the cake tin
  • Arrange the plums to form one consistent layer
  • Cover with the rest of the batter and spread evenly
  • Sprinkle with the almond flakes
