
Plum cake by @recipesformax
A cake from my dream…
You need
- Ring cake tin
- Electric mixer or Thermomix
- 150g butter
- 100g caster sugar
- 50g white marzipan
- 4 eggs
- 150g gluten free self-raising flour
- 1 teaspoon gluten free baking powder
- 100g desiccated coconut
- 100g corn flour
- 100ml kefir
- 6 plums pitted and cut into quarters
- Almond flakes
- Icing sugar for dusting
- Preheat the oven to 185C
- Melt the butter
- Add the sugar, marzipan and whisk until light and creamy (use the electric mixer)
- Add the eggs one at a time, keep whisking
- Sift in the flour and whisk again
- Add the kefir, coconut, corn flour and mix well
- Spoon some of the batter into the base of the cake tin
- Arrange the plums to form one consistent layer
- Cover the plums with the rest of the batter and spread evenly
- Sprinkle with the almond flakes
- Bake in the preheated oven for 45 min, until the cake is firm to the touch and a wooden stick inserted into the middle of the cake comes out clean
- Remove from the oven and let it cool for 10 minutes
- Remove from the tin and dust with the icing sugar

Thermomix
- Preheat the oven to 185C
- Melt the butter (2 min – Speed 2 – 60C)
- Add the sugar, marzipan and whisk until light and creamy (2 min – Speed 5)
- Add the eggs one at a time, keep whisking (2 min – Speed 5)
- Sift in the flour and whisk again (1 min – Dough)
- Add the kefir, coconut, corn flour and mix well (2 min – Dough)
- Spoon some of the batter into the base of the cake tin
- Arrange the plums to form one consistent layer
- Cover with the rest of the batter and spread evenly
- Sprinkle with the almond flakes
- Bake in the preheated oven for 45 min, until the cake is firm to the touch and a wooden stick inserted into the middle of the cake comes out clean.
- Remove from the oven and let it cool for 10 minutes
- Remove from the tin and dust with the icing sugar
