
Beetroot and pomegranate salad by @recipiesformax
This is a super healthy salad inspired by my recent trip to Armenia where the pomegranate is a symbol of life.
Beetroots are an excellent source of folic acid and a very good source of fiber, manganese and potassium. Due to its high sugar content, beetroot is delicious eaten raw. Eating it raw preserves vitamins and antioxidants. Pomegranates also have antioxidant, antiviral and anti-tumor properties. Enjoy!
You need
- Grater or mandoline
Ingredients
- 1 medium raw beetroot;
- 100g pomegranate seeds;
- 1 tbsp flax seed oil (or olive oil);
- 1 tbsp pomegranate molasses (or lemon juice);
- 10g fresh coriander;
Step by step
- Peel and trim the beetroot, then coarsely grate on a grater ( wear rubber gloves to avoid pink fingers).
- Add the pomegranate seeds.
- Add the coriander leaves chopped roughly.
- Dress the salad with flax seed oil and molasses.
