
Pasta with zucchini and chorizo by @recipesformax
This is a classic Italian dish with a hint of Spanish spices. Chorizo makes this pasta very special.
You need
- Sauce pan;
- Large pot;
- 1 zucchini;
- 1 white onion;
- 3 garlic cloves;
- 10-15g coriander leaves;
- 60g chorizo;
- 1 can chopped tomatoes;
- 2 tbsp extra virgin olive oil;
- Sea salt and black pepper;
- 120g dry pasta;
- 15g Parmesan cheese;
- Peel and finely chop the onion. Crush the garlic.
- Heat the olive oil in a large pan over medium heat. Cook the onion and garlic until golden for about 1 minute.
- Add the zucchini (chopped into small chunks) and chorizo (finely sliced). Cook for additional 3-5 minutes.
- Stir in the tomatoes and season with salt and black pepper.
- Add the chopped coriander and simmer for 3-5 minutes.
- Meanwhile, fill a large pot with boiling water, add salt and bring back to the boil.
- Add the pasta and cook according to packet instructions. If you want your pasta to be al dente, reduce the time by one minute.
- When the pasta is done, drain in a colander over the sink and tip it back into the pot. Stir the sauce in.
- Sprinkle with Parmesan and serve.

Thermomix
- Put the onion and garlic into the bowl and chop 5 sec/Speed 6.
- Scrape down the sides of the bowl and sauté 3 minutes/100° C/Speed Spoon.
- Add the tomatoes and cook 6 min/100° C/Speed Spoon/Reverse Blade.
- Cut the zucchini into small chunks, slice the chorizo.
- Add them to the bowl, add the herbs and seasoning and cook for another 6 minutes/100° C/Speed Spoon/Reverse Blade.
- Add the coriander at the last moment.
