This is a classic Italian dish with a hint of Spanish spices.  Chorizo makes this pasta very special.

You need

  • Sauce pan;
  • Large pot;

ingr Ingredients

  • 1 zucchini;
  • 1 white onion;
  • 3 garlic cloves;
  • 10-15g coriander leaves;
  • 60g chorizo;
  • 1 can chopped tomatoes;
  • 2 tbsp extra virgin olive oil;
  • Sea salt and black pepper;
  • 120g dry pasta;
  • 15g Parmesan cheese;

methodStep by step

  • Peel and finely chop the onion. Crush the garlic.
  • Heat the olive oil in a large pan over medium heat. Cook the onion and garlic until golden for about 1 minute.
  • Add the zucchini (chopped into small chunks) and chorizo (finely sliced). Cook for additional 3-5 minutes.
  • Stir in the tomatoes and season with salt and black pepper.
  • Add the chopped coriander and simmer for 3-5 minutes.
  • Meanwhile, fill a large pot with boiling water, add salt and bring back to the boil.
  • Add the pasta and cook according to packet instructions. If you want your pasta to be al dente, reduce the time by one minute.
  • When the pasta is done, drain in a colander over the sink and tip it back into the pot. Stir the sauce in.
  • Sprinkle with Parmesan and serve.

  • Put the onion and garlic into the bowl and chop 5 sec/Speed 6.
  • Scrape down the sides of the bowl and sauté 3 minutes/100° C/Speed Spoon.
  • Add the tomatoes and cook 6 min/100° C/Speed Spoon/Reverse Blade.
  • Cut the zucchini into small chunks, slice the chorizo.
  • Add them to the bowl, add the herbs and seasoning and cook for another 6 minutes/100° C/Speed Spoon/Reverse Blade.
  • Add the coriander at the last moment.
