
Chicken with oranges and fennel by @recipesformax
This is my early Christmas present to you all. Forget your turkey and try something new this year. This dish is full of flavour and will make your Christmas menu very special.
You need
- Large bowl
- Large roasting tray
- 1kg chicken thighs (skin on);
- 2 large red onions;
- 2 oranges;
- 2 large (500g) fennel bulbs;
- 4tbsp olive oil;
- 4 tbsp mustard;
- 4 tbsp lemon juice;
- 4 tbsp fennel seeds;
- 200g pomegranate seeds to serve;
- Cut the onions and fennel into thin wedges.
- Slice oranges.
- Mix all other ingredients (apart from pomegranate) to make the marinade;
- Put the thighs fillets, oranges, onions, fennel into the large bowl. Add the marinate and toss everything together with your hands.
- Marinate overnight.
- Preheat the oven to 200C.
- Place everything in the large roasting pan, making sure the thighs are skin up. Pour the marinate over.
- Roast for 45 minutes until the chicken skin is brown and crisp.
- Serve with pomegranate seeds (optional), potatoes or rice.

- Total basket £14.77 | Cost of ingredients (6 servings) £13.77 | Per serving £2.30 (or £1.80 without pomegranate seeds)
