
Rye bread by @recipesformax
My mission to create a recipe for this rye bread lasted one year. I cannot recollect how many failed and semi-failed attempts I had but the result you see on the picture above is absolutely fantastic. What I like in this recipe is the fact that it is quick and easy. Dry yeast and additional gluten are optional. It really depends on how mature your starter is, how warm is your house, and many other subtle things. I bake this rye every week now and it has never disappointed me.
You need
- Bread machine
- 2 cup dark rye flour
- 1 cup strong white flour
- 1 cup rye starter
- 2 tsp dry yeast
- 1-2 tbsp gluten
- 1/2 tsp sea salt
- 2 tbsp sunflower seeds
- 2 tbsp olive oil
- 2 tbsp honey
- 1 cup water
Step by step
- Put all ingredients into the bread maker container (the dry ingredients first).
- Use a rye bread blade and a special cycle for rye bread recipes.
- Start a “kneed-only” menu and run it for 10-15 min.
- Leave the dough for 6-10 hours.
- Start a “bake-only” menu. Set it to 1.5h.
