
Onion bhaji by @recipesformax
You need
- Large frying pan
- 2 eggs (you can replace eggs with water or 3 tbsp of plain yogurt);
- 2-3 onions, sliced;
- 60g gram flour and 30g rice flour (or 90g plain flour);
- 1 tsp ground coriander;
- 1 tsp ground cumin;
- 1 tsp turmeric;
- pinch of salt
- Beat the eggs in a bowl.
- Add the flour and spices. Beat together to create a thick paste.
- Cut the onion into thin rings and add them to the paste. Stir well to combine making sure they are well coated.
- Heat the oil in a frying pan over a medium heat. When hot add a large spoonful of the onions.
- Cook for about four minutes, turning occasionally, until crisp and golden.
- Remove and drain on kitchen paper.
- Serve with freshly chopped coriander and lime.
Thermomix
- You can actually make the bhaji batter in your ™ bowl. Beat the eggs for 30 sec/Speed 5.
- Add the flour and spices and beat together again for 30 sec/Speed 5.
- Cut the onion into thin rings and add them to the bowl. Combine together – 1 min/RSpoon.
- Then fry the bhaji as described above.
