
Queijadinha by @recipesformax
This is a variation of two Brazilian sweet treats – “queijadinha” and “bom-bocado“. The queijadinha is a sweet muffin flavored with cheese, the bom-bocado is made with coconut. It is perfect for dessert or snack.
You need
- Large baking tray
- Muffin pan or silicone cupcake cases
- 200g caster sugar
- 500ml milk
- 5 eggs
- 125g grated Parmesan or mature cheddar
- 100g grated dessicated coconut
- 50g flour
- 25g unsalted butter
- Grease the muffin pan.
- Preheat the oven to 180C.
- Blend all the ingredients (TM: 1min/speed 5) and pour the mixture in each muffin case.
- You should use a bain-marie to bake it: fill the baking sheet with boiling water until water line reaches 3/4 of the way up the sides of the muffin cases.
- Bake for 35-45 min until golden brown.
- Let it cool, umould and keep in the fridge.
