
Cabbage pie by @recipesformax
This fantastic recipe is great for parties, packed lunches or supper.
You need
- Large baking tray
- 1 white cabbage (apx 500g);
- 1 white onion;
- 200g butter;
- 6 eggs;
- 2 cups of milk;
- 3-4 cups of bread flour;
- 2 tsp dry yeast;
- 3 tsp of sugar;
- 1 tsp salt;
- black pepper;
- Warm 1 cup of milk (Thermomix: 3min/37C/Spoon).
- Add the dry yeast, sugar, 1 cup of flour, mix (Thermomix: 3min/37C/Spoon) and leave for 15-20 min (it should start bubbling).
- Add 2 cups of flour, 3 eggs, butter (soft, room temperature) and knead adding more flour if needed to achieve a smooth and elastic dough (Thermomix: 10min/Kneading).
- Grease a bowl with some oil and place dough in it. Cover with a wet kitchen towel and let rise until doubled (2-3 hours or even overnight).
- Boil 2 eggs for 10 minutes, rinse with cold water.
- Finely chop the cabbage and onion (Thermomix: 1min/Speed 5).
- Heat 3 tbsp of oil in a large pan. Saute the vegetables with 1 cup of milk until tender (Thermomix: 10 min/100C/RS). Season with salt and pepper.
- Punch down dough and divide into 2 pieces, one slightly larger than the other. Roll out larger portion into a rectangle on a parchment-lined baking sheet.
- Chop the hard-boiled eggs (Thermomix: 10 sec/Speed 4) and mix with the cabbage.
- Spread the filling evenly.
- Roll out remaining piece of dough and place over the cabbage filling. Seal the edges.
- Cover with a kitchen towel and let rest 40-60 minutes.
- Beat one egg and brush the pie with the egg wash.
- Preheat the oven to 180C.
- Bake for 45-55 min until golden brown.
- Serve warm or at room temperature, with a green salad.
