
Couscous and sprouts salad by @recipesformax
A very healthy salad with a low fat-to-calorie ratio, packed with anti-oxidants, vitamin A, C, E, and K. Ready in 10 minutes! Enjoy it alone or as a side dish with white fish or chicken.
Ingredients
- 250g couscous;
- 200g trimmed brussel sprouts;
- 150g frozen cranberries;
- olive oil;
- black pepper;
Step by step
- Defrost the cranberries (you can do it quickly in the microwave).
- Place couscous with a pinch of salt into a large salad bowl. Stir to combine. Pour over boiling water, covering couscous (200ml of water per 100g of couscous or 1 cup of water for 2/3 cup of couscous). Leave for 5 minutes.
- Switch on your oven (grill mode – 240C). Wash brussel sprouts, cut them in half. Cook in a microwave in a plastic container for a couple of minutes and transfer into an oven proof dish. Add some olive oil and put under the grill briefly until slightly golden brown.
- Defrost the cranberries (you can do it quickly in the microwave).
- Combine everything together and season with black pepper.
