
Pasta wit salmon by @recipesformax
Brain food! This recipe is easy, cheap, and will fill you with good energy. Salmon is a great source of of high-quality protein, vitamins, minerals, and it contains Omega-3 fatty acids.
You need
- Sauce pan;
- Large pot;
- 1 salmon fillet;
- 100g double cream;
- 10g coriander;
- 1-2 tbsp extra virgin olive oil;
- 2-3 handful of dry pasta per person;
- 5-10g grated Parmesan
- I usually cook this pasta using leftover salmon – poached, steamed or grilled – it doesn’t matter.
- Chop the coriander leaves.
- Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the salmon flakes. Warm for a couple of minutes.
- Stir in the cream and the coriander. Cook for 2 minutes more.
- Fill a large pot with boiling water, add salt and bring back to the boil.
- Add the pasta and cook according to instructions on the package. If you want your pasta to be “al dente”, reduce the time by one minute.
- When the pasta is done, drain it in a colander and tip it back into the pot.
- Stir the sauce in.
- Serve with finely grated Parmesan cheese.
