Brain food!  This recipe is easy, cheap, and will fill you with good energy. Salmon is a great source of of high-quality protein, vitamins, minerals, and it contains Omega-3 fatty acids.

You need

  • Sauce pan;
  • Large pot;

  • 1 salmon fillet;
  • 100g double cream;
  • 10g coriander;
  • 1-2 tbsp extra virgin olive oil;
  • 2-3 handful of dry pasta per person;
  • 5-10g grated Parmesan

methodStep by step

  • I usually cook this pasta using leftover salmon – poached, steamed or grilled – it doesn’t matter.
  • Chop the coriander leaves.
  • Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the salmon flakes. Warm for a couple of minutes.
  • Stir in the cream and the coriander. Cook for 2 minutes more.
  • Fill a large pot with boiling water, add salt and bring back to the boil.
  • Add the pasta and cook according to instructions on the package. If you want your pasta to be “al dente”, reduce the time by one minute.
  • When the pasta is done, drain it in a colander and tip it back into the pot.
  • Stir the sauce in.
  • Serve with finely grated Parmesan cheese.
