You need
- Bread machine or Thermomix for a better result with kneading but you can get the same result doing it manually;
- 300g milk;
- 1 tbsp dry yeast;
- 20g sugar;
- 25g butter;
- 500g white bread flour;
- 1 tsp salt;
- 250g ricotta;
- 1 egg;
Step by step
- Mix the warm milk with the yeast, butter, and sugar in a big bowl (Thermomix: 3 min/37°C/speed 1).
- Add the flour and salt.
- Knead the dough until you get a nice smooth texture (2 min in Thermomix).
- Leave the dough covered in the bowl for 45-60 minutes.
- Preheat the oven to 230-250°C.
- Divide the dough into 12 balls. Place each ball in a non-stick baking sheet. Squeeze each ball in the centre with your fingers to create a nest (I use a small shot glass to press the centre on each ball).
- Put some ricotta in each nest and brush with the bitten egg.
- Cook for around 20 minutes until risen and golden.
