
Caesar salad by @recipesformax
Our lovely friends reminded me of this great classic salad when we visited them in Berlin a while ago. Max loves Caesar salad so I decided to add it to his collection. I don’t use anchovies for dressing as I find them too salty. Here is a lighter option of the Caesar dressing using natural yogurt.
- 2 Romaine lettuce heads;
- 130g cherry tomatoes;
- 425g mini chicken fillets;
- 30 croutons;
- 30g Parmesan cheese;
- 2 tbsp light mayonnaise;
- 1 tbsp mustard;
- 1 tbsp olive oil;
- 3 tbsp natural yogurt;
- 2 garlic cloves;
- 2 tbsp lemon juice;
Step by step
- Grill the chicken fillets and leave them to cool.
- Wash and chop lettuce.
- Halve cherry tomatoes.
- To make the dressing grate the garlic, then add the lemon juice, mayo, mustard, and yogurt. Whisk well to combine. Drizzle in the olive oil while continually whisking.
- Toss the lettuce and tomatoes with the dressing in a large bowl.
- Slice the chicken and scatter over the salad leaves.
- Top the salad with the croutons.
- Shave the cheese with a peeler over each plate.
