
Halloumi, spinach and peach by @recipesformax
This salad is super healthy, packed with good calories. I like using chilly olive oil with peaches. It’s a divine match. All you need is to add chilli flakes to your usual extra virgin and leave it for a couple of days. I use a small bottle to keep it always fresh.
- 100g fresh spinach leaves;
- 70g wild rocket;
- 2 peaches;
- 150g green beans;
- 125g halloumi;
- olive oil with chilli, balsamic vinegar (or pomegranate molasses)
Step by step
- Arrange the spinach and wild rocket on your plates.
- Cut halloumi into rectangular pieces and fry it quickly in a pan (no oil is needed).
- Cut the peaches into thin slices and add them to your salad.
- Then top the salad with the green beans, washed and cooked in a microwave for 2 minutes in a plastic container.
- Season with spicy olive oil and balsamic vinegar.
- Serve with rye thin crispy bread or pittas.
