
White fish in tomato sauce by @recipesformax
I really like the combination of fennel and fish. Cod is the best for this recipe but other cheaper white fish will do. You have to taste passata first as some brands are quite sweet so you don’t need to add any extra sugar to your sauce. You can also replace salt with soya sauce.
- 1 white onion sliced;
- 1 fennel bulb sliced;
- 1 fish stock cube;
- 6 white fish fillets (500g);
- 1/2 bottle tomato passata;
- 10g fresh coriander;
- 1 tsp sugar;
- salt to taste;
- Miniature new potatoes and green beans to serve;
Step by step
- Heat the oil in a large frying pan, add the onion and fennel. Fry for 5 mins until lightly browned.
- Stir in the tomato passata, fish cubes, salt, sugar. Bring the sauce to the boil and simmer for 5 mins.
- Slip the fish fillets into the sauce. Cover with a lid and gently cook for 10 mins until the fish flakes easily.
- Serve with baked or steamed potatoes and green beans.
