
Fish pie by @recipesformax
This simple fish pie is light and healthy. No creamy sauce but a lot of vegetables and a bit of cheese on the top to spice it up. You can use any kind of fish you like or simply grab a fish pie mix available at many shops today.
You need
- Ceramic round individual casseroles/pie dishes or a deep backing tray
- 1 white onion;
- 1 large carrot;
- 1 celery stick;
- 1/4 fennel bulb;
- 2 garlic cloves;
- 20g fresh dill;
- 2-3 code fillets or 400g fish mix;
- 15 cherry tomatoes halved;
- 3 large white potatoes;
- 1 egg;
- 1/3 cup milk;
- 1 tbsp butter;
- 100g grated cheddar (optional);
- olive oil, sea salt and fresh ground black pepper;
- Peel the potatoes and cut into 2cm chunks. I always cook potatoes in my microwave if I need to mash them – it’s quick and easy, saves time and energy. Cook them for around 8-10 minutes, until soft (to check just stick your knife into them).
- Meanwhile, peel the carrot and then put all the vegetables (except the tomatoes) and the dill in a food processor and work them quickly for 30 sec.
- Distribute the veg mixture between 3 individual casseroles.
- Cut the fish into bite-size chunks and add to the dishes. Then halve the tomatoes and add them too. Drizzle with olive oil and add a pinch of salt and pepper. Mix everything together.
- By now your potatoes should be cooked, so drain them in a colander and return to the container. Add the butter, egg and milk. Mash until nice and smooth, then spread evenly over the top of your mixture.
- Top each pie dish with some grated cheddar (optional).
- Place in a 200C preheated oven for around 30 minutes or until cooked through, crispy and golden on top. Serve piping hot with a green salad.
