
Potato fritters by @recipesformax
This is a basic recipe for vegetable fritters. You can use courgettes, beetroots, squash, carrots etc. if you fancy something different. The main ingredients are an egg and a bit of flour and then it’s up to you how creative you’d like to be. Add different herbs and spices (Indian spices are really good) to modify this recipe.
Potato fritters (or pancakes) are associated with different cuisines in Europe and the Middle East. They are called differently in different countries (draniki, deruny, latkes, bramborak etc.) and sometimes served with apple sauce instead of soured cream. Latkes are traditionally eaten by Jews during the Hanukkah festival. Apparently the word “latke” itself comes from the Russian/Ukrainian word “latka” meaning “patch”.
You need
- Grater
- 2 large potatoes
- 1/2 white onion
- 1 medium egg
- 2 garlic cloves
- 2 tablespoons all purpose flour
- 10g fresh parsley
- salt and black pepper to taste
- oil for frying
- sour cream to serve
- Grate the potatoes and onions.
- It really depends on potatoes but sometimes you will need to get excess water out after grating them.
- Mix the beaten egg, minced garlic, chopped parsley, flour, salt and pepper in a large bowl.
- Incorporate the potatoes and onions into the mixture until well combined.
- Put a pan on a medium heat and add some oil.
- Place a spoonful of the potato mixture into the pan, press gently with a spoon to flatten it.
- It will take about 3-4 minutes on each side to cook the fritters until they are golden brown. Add more oil if needed.
- Drain the cooked fritters on a kitchen towels to remove the excess of oil.
- Serve with sour cream.
