
Prawns and peach super salad by @recipesformax

- 1 fennel bulb;
- 2 peaches;
- 1 avocado;
- 170g king prawns;
- 50g pumpkin seeds;
- 80g garlic and herbs pita bread chips;
- olive oil with chilli, balsamic vinegar (or pomegranate molasses)
Step by step
- Slice the fennel into very thin strips and arrange on your plates.
- Cut the avocado lengthwise around the seed, open the two halves, remove the pit and scoop out the flesh with a spoon.
- Cut the peaches into thin slices.
- Add the prawns.
- Top your salad with the crashed chips and seeds.
- Season with spicy olive oil and balsamic vinegar.
