Prawns and peach super salad by @recipesformax

All my super-salads are very easy to make. The most important thing is good quality vegetables and fruits. I miss my time in Italy when I used yo buy them at a local market…

ingr Ingredients

  • 1 fennel bulb;
  • 2 peaches;
  • 1 avocado;
  • 170g king prawns;
  • 50g pumpkin seeds;
  • 80g garlic and herbs pita bread chips;
  • olive oil with chilli, balsamic vinegar (or pomegranate molasses)

method

Step by step

  • Slice the fennel into very thin strips and arrange on your plates.
  • Cut the avocado lengthwise around the seed, open the two halves, remove the pit and scoop out the flesh with a spoon.
  • Cut the peaches into thin slices.
  • Add the prawns.
  • Top your salad with the crashed chips and seeds.
  • Season with spicy olive oil and balsamic vinegar.
