The poached pears in red wine recipe makes for a classic French dessert. Easy to make and absolutely delicious. Our French Xmas table wouldn’t be complete without them.

  • Large pan

  • 6 pears
  • 750ml red wine (for cooking)
  • 1 lemon
  • 1 cinnamon stick
  • 6 cloves
  • 1 vanilla stick or 1 tsp vanilla extract
  • 3 tbsp sugar

method

Step by step

  • Peel and core the pears. Cut them into halves.
  • Add the wine and sugar in the pan.
  • Slice the lemon and add it to the mixture.
  • Add the cinnamon, cloves, and vanilla.
  • Place the pears in the pan and bring to the boil. Simmer for 5 to 10 minutes or until pears are tender.
  • Transfer the pears to a serving plate.
  • Keep the liquid boiling until it becomes syrupy (might take a while…).
  • Pour the sauce (filtered) over the pears.
  • Serve it with a bit of crème patisserie or vanilla ice-cream.
