
Salmon filo parcel by @recipesformax
This is a very healthy and tasty way to cook salmon. When you open your parcel it will reveal three nice colours – green, white, and pink. I don’t add any salt or spices as feta cheese has it all.
You need
- Non-Stick Baking Sheet
- 250g filo pastry sheets
- 200g feta cheese
- 250g fresh spinach leaves
- 500g fresh salmon or 6 salmon fillets
- Pierce the spinach bag in several places and put it in a microwave for a couple of minutes.
- Cut the salmon into 1 inch cubes.
- Crumble the feta with your fingers.
- Lay a sheet of pastry onto a large chopping board. Place some salmon, spinach, and feta at the end nearest to you and roll up the sheet to form a parcel. Place the parcel seam-side down on the tray. Repeat to make 6 parcels.
- Bake for 25-30 minutes or until golden in a pre-heated oven at 200 °C.
- Serve with steamed vegetables or fresh salad.
