
Chilli con carne by @recipesformax
This recipe is ideal for parties or long lazy weekends. You can serve the chilli with corn tortillas or plain rice.
You need
- Large pan
- 2 large onions;
- 1 green pepper;
- 6 celery sticks;
- 4 garlic cloves;
- fresh coriander;
- 1 tsp chilli powder;
- 1 tsp paprika;
- 1 heaped tbsp ground cumin;
- 1 heaped tbsp turmeric (optional);
- 1kg lean minced beef;
- 1 beef stock cube or pot;
- 400g can chopped tomatoes;
- 410g can red kidney beans;
- 400g can red black beans;
- 400g frozen sweet corn;
- corn tortillas to serve;
- soured cream and/or guacamole to serve;
- Chop your vegetables (the onions, garlic, green paper, coriander and celery).
- Put your pan on the hob over a medium heat. Add the oil and leave it for a couple of minutes until hot. Add the onions and cook, stirring frequently.
- Add the meat to the pan and break it up with your spatula until all the mince is uniform.
- Add the spices (the chilli, paprika, cumin and turmeric). Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
- Add the green pepper and celery.
- Add the stock pot. Open the can of chopped tomatoes and pour it into the pan. You might need some water to make sure the mixture is not too dry.
- Give it a good stir and put a lid on the pan. Turn down the heat and leave it bubbling for 10 minutes.
- Drain and rinse the beans. Add them to the pan followed by the sweet corn.
- Now it’s time to add more flavour to your dish – the garlic and coriander. Give it a good stir again. Replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving.
- Serve with warm corn tortillas and soured cream (and or guacamole) or rice.
