
Scrambled eggs with spinach and blue brie by @recipesformax
I am not very good at perfect omelettes so I tend to scramble eggs adding different toppings depending of what I have in my fridge or what my mood tells me. This breakfast is full of energy and flavour. I use oats instead of flour. Blue brie revives this dish and makes it very special.
You need
- Non stick pan;
- Wooden spoon;
- 2 eggs
- 30ml milk
- 20g oat flour
- 3 cubes of frozen spinach
- 30g blue brie
Step by step
- Beat the eggs, add the milk and the oat flour. Mix and lightly season (note that brie is quite salty).
- Defrost the spinach in a microwave or use fresh leaves.
- Heat the pan and add some oil.
- Add the spinach and cook for a minute.
- Pour the liquid mixture in and let it sit for 20-30 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds then stir and fold again.
- Cut the brie into small cubes and add them just before the eggs are ready.
