I am not very good at perfect omelettes so I tend to scramble eggs adding different toppings depending of what I have in my fridge or what my mood tells me. This breakfast is full of energy and flavour. I use oats instead of flour. Blue brie revives this dish and makes it very special.

  • Non stick pan;
  • Wooden spoon;

ingr Ingredients

  • 2 eggs
  • 30ml milk
  • 20g oat flour
  • 3 cubes of frozen spinach
  • 30g blue brie

method

Step by step

  • Beat the eggs, add  the milk and the oat flour. Mix and lightly season (note that brie is quite salty).
  • Defrost the spinach in a microwave or use fresh leaves.
  • Heat the pan and add some oil.
  • Add the spinach and cook for a minute.
  • Pour the liquid mixture in and let it sit for 20-30 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds then stir and fold again.
  • Cut the brie into small cubes and add them just before the eggs are ready.
