After several failed attempts I have finally found right ingredients for this flavourful rye bread. This dark rich bread is great for breakfast, toasted or plain. It also makes delicious sandwiches.

The main trick here is gluten. Rye flour contains much less gluten than standard bread flour. If you don’t add some extra gluten your bread will turn flat and sticky. Unfortunately gluten is hard to find in supermarkets. I had to shop online to find all ingredients needed.

I use my bread machine but you can bake it in an oven as well (200C for around 30 min).

  • 225g dark rye flour
  • 225g strong white flour
  • 1 1/2 tsp dry yeast
  • 1 tbsp gluten
  • 1/2 tsp sea salt
  • 1 tbsp sugar
  • 2 tbsp unsweetened cocoa powder
  • tbsp caraway seeds
  • 2 tbsp olive oil
  • 2 tbsp molasses
  • 300ml water

method

Step by step

  • Put all ingredients into the bread maker container (the dry ingredients first).
  • Use a rye bread blade and a special cycle for rye bread recipes.
