Scones are great for breakfast or afternoon tea. The main trick is not to handle your dough too much before baking. It should be quite wet and sticky. These scones are light and fluffy. You can serve them with clotted cream, butter and jam.

  • Wooden dough roller;

  • 350g self-raising flour (more for dusting)
  • ¼ tsp salt
  • 1 tsp baking powder
  • 80g unsalted butter (soft)
  • 3 tbsp caster sugar
  • 175ml semi-skimmed milk
  • 1 tsp vanilla extract
  • 1 squeeze lemon juice
  • 1 beaten egg for glazing

method

Step by step

  • Mix the flour, baking powder, salt in a bowl.
  • Add the soft (even melted – you can put the butter in a microwave briefly) butter and sugar, then rub in with your fingers until the mix looks like fine crumbs.
  • Warm the milk in the microwave for about 30 secs (do not overheat!). Add the vanilla and lemon juice
  • Slowly pour in the liquid mixture in and knead well unlit your dough is smooth.
  • Preheat the oven to 185°c.
  • Lightly roll the dough out until it is approximetly 2cm thick. Cut out scones and put them on your baking trays (use a non-stick baking sheet).
  • Brush each one with some beaten egg.
  • Cook for around 15 minutes until risen and golden on the top.
