It is one of Max’s recent favourites. The classic dish often comes with a fried egg if you want to boost your protein intake. You can also swap pork for chicken or seafood if you wish.
- 500g pork mince or pork fillet (thinly sliced);
- 150-200g green beans, trimmed;
- 1 large (or 2 small) red capsicum, halved, seeded, thinly sliced;
- 1 large shallot, finely chopped;
- 2 fresh red chillies, halved, seeded, finely shopped;
- 4 garlic cloves, finely chopped;
- 25g fresh Thai basil leaves;
- 2 tbsp oyster sauce;
- 1 tbsp fish sauce;
- 400g (~100g per person) steamed Jasmine fragrant (or Basmati) rice to serve;
Step by step
- Heat 2 teaspoons of oil in a large pan (ideally a wok).
- Stir-fry the green beans and bell pepper for 3-4 minutes. Remove to a plate.
- Stir-fry the shallot, chilli and garlic finely chopped (I tend to use my food processor when possible).
- Add the pork (make sure to break the mince up with a wooden spoon);
- When the pork is well cooked add the beans, red pepper, fish sauce, oyster sauce, and basil leaves. Stir well for a minute. If the mixture is dry you can add a couple of tbsp of water;
- Serve with rice;
